For the past year, Ben from Urai and Payesone from Ramen MENRI have been on a journey together—traveling through Thailand and Japan, eating side by side, meeting local artisans, and learning from each other's cultures.

Along the way, they've exchanged ideas, challenged one another, and continued to grow not only as chefs, but as friends.

On July 18, that journey comes together for one special bowl.

Khao Soi Tsukemen

A collaboration that brings together the bold, aromatic flavors of Thailand with the delicate balance of Japanese Ramen.

From Urai: Homemade Kao Soi curry paste will be mixed in the dipping dashi seasoned with coconut milk, fish sauce, and palm sugar. Served alongside stuffed Chicken "Chashu" stuffed with two farces: first, fennel and garlic chive sausage; second, “Kao Soi” turmeric.

From Ramen MENRI: Signature dashi carefully extracted from ingredients such as Niboshi, Atsukezuribushi, Konbu from Japan, Shoyu tare, Homemade tsukemen noodles using three different types of flours, Khao Soi’s iconic crispy fried noodles, House-made Orange Kosho pickled cabbage
